As I'm sure some of you are aware, but not all of you, October is the Vegan Mofo (MOnth of FOod). It's been about a year since I've actively eliminated all animal products from my diet, and I don't think I've ever been happier or healthier. To celebrate this month and get more people to think about what they are eating and where it comes from (this is also spawned by all of the reading about the rise of the industrial meat industry for my history classes), I'm going to go through the alphabet and find a recipe that is easy to make, delicious, and VEGAN.
Sadly, I just decided to do this like 5 minutes ago and haven't prepared pictures or actually made this recipe, BUT I've made very similar dishes in the past and think that this would turn out well.
So, for day #1, let's look at APPLES.
I've got one in my bag for a snack, and I am just dying to get someone to take me apple picking this winter. I'm a fan of all forms of apples, from sauce in baked goods to pie to straight up slices.
I've picked this recipe for Apple Crisp. I love, love, LOVE the warm, gooeyness of apple crisp, and I am going to make this recipe as soon as I get to a grocery store to pick up the remaining ingredients. Remember to use Earth Balance or a similar vegan butter substitute, and if you make it, let me know how it goes. Maybe a little soy vanilla ice cream on top? I highly recommend Trader Joe's version.
